Here’s what you’ll need:
1 cup fresh basil
1/2 cup fresh mint
1 tbsp fresh thyme
2 tsp dry rosemary
1 clove garlic
1 Tablespoon extra virgin olive oil
1 lb cauliflower rice (I found it at Trader Joe’s)
1/2 tsp onion powder
1/4 tsp salt
1/8 tsp black pepper
1/2 cup pecans, chopped
1/2 cup dried cranberries
2 Tablespoon liquid aminos
Zest of 1 lemon
Instructions:
- Combine basil, mint, thyme, rosemary and garlic in the food processor. Pulse until it forms a paste
- Heat olive oil in a large non stick skillet. Add the herbs and garlic cook over medium heat for 1 minute. Add cauliflower, onion powder, salt and pepper and toss well. Cook for another 5 minutes, tossing often.
- Add pecans and cranberries, toss well and cook for another 5 minutes.
- Add liquid aminos and lemon zest, toss well and continue cooking for 2 more minutes.
- Serve warm
